May 29th, 2010 at 12:37 am
Dude…chill out MikoWilson. Just trying to keep it light. I get the joke. No need to go all vulgar. I’ve made the bread and the recipe is a good one. The chef is funny.
May 29th, 2010 at 12:48 am
We call our ends of the bread “The Hill”, maybe because my grandmother is from Ireland…hence the hills or “Heel” because rough, dry heels run in the family ROFL not sure which spelling LOL. Love your videos. I’m going to start my no-knead dough right now.
May 29th, 2010 at 1:43 am
@Chaugar Either you’re trying to be funny yourself, or you’re truly fucking retarded.
May 29th, 2010 at 2:28 am
Did you say 1/4 teaspoon yeast? That doesn’t seem like much yeast at all.
May 29th, 2010 at 3:15 am
Thanks for posting this recipe
May 29th, 2010 at 3:47 am
@Chaugar tongue in cheek all tongue in cheek. That’s what I love about his videos.

This is great! I can’t wait to make it. I make Challah, stuffed Foccacia, etc. but I have never attempted Ciabatta. Thanks
May 29th, 2010 at 4:27 am
Chef… I tried this recipe & method and it came out this flat piece of bread, nothing like your end result. I shall try again. I’ve been making home made breads for 40 years now so I do know how to handle the process. Like I said… I’ll try again. ♥ you Chef..!!!! ♥
May 29th, 2010 at 5:01 am
Love this bread!!! I make it all of the time but I don’t let it rise for 18 hours. I have done it that way but don’t. I use the highly active Fleishmans yeast packets. I use 2 packs for the quick rise and bake one and just 1 for the long rise version. I mix 2C white, 2C wheat or rye and white. I also throw a couple TBSP sugar with the heavy flours. WONDERFUL… Thanks so much
May 29th, 2010 at 5:44 am
Dear chef John, we also call the end of the bread “CADDOZZU” OR “COZZU”
since that part of the bread is more crispy or tougher than the rest it refers to the more callus part of the loaf. I was born in the north west tip of sicily and we still speak the sicilian from 50 yrs. ago. I hope this will answer your question.

Love this!! We call the ends of our bread the “konks”. That comes from New Orleans and I have no idea how it’s spelled.
